There are two historical theories about Castella, one is that it originated from a confectionery in Castilla, Spain, and that it spread to Portugal and was called Casteira which became Castella later on. Another historical theory is that it comes from the Portuguese word castelo, meaning ‘castle’. In fact, pão de ló, a bread that is believed to be the prototype of castella made in Portugal which is very similar in appearance to a castle. The name of Castile is derived from the word Castillo, meaning fortress, and the shape of the castle was used as the coat of arms, so both theories are derived from the word for castle.
Castella was originally made as a snack, but during the Age of Exploration, it was used as a staple food for sailors along with pound cake because it could be stored for a long time. During the Age of Exploration, it is said that a large amount of sugar was used in the process of making castella for long-term storage.
